In 2000, David Yeo, a Singaporean-born, British lawyer was encouraged by friends to open a restaurant as his entertaining at home was so enjoyed. David opened a simple 60-cover kitchen in Hong Kong, which was a runaway success. Since then, Aqua Restaurant Group has grown to comprise over 25 restaurants across Hong Kong, Beijing and London, where the first UK site opened on Regent Street in 2009. Aqua Restaurant Group - London includes Japanese restaurant aqua kyoto, Spanish restaurant aqua nueva and cocktail bar aqua spirit, all on Regent Street in the landmark former Dickins & Jones department store building (known collectively as aqua london), and contemporary British restaurant and bar aqua shard and northern Chinese restaurant Hutong, both at The Shard on Levels 31 and 33 respectively.
