The Three Chimneys is a 5-Star, 3 AA Rosette Restaurant with Rooms in the Hebridean Island of Skye, off the north west coast of Scotland. With a long-standing reputation for wonderful food and hospitality, The Three Chimneys has remained in the ownership of Eddie and Shirley Spear for 32 years. Today, the General Manager is Paul Hughes and Head Chef is Scott Davies. The Restaurant Manager and Head Sommelier is Petri Pentikainen and his Assistant Manager/Sommelier, Charlotte Poynton. The 36-cover restaurant is set within the solid stone walls of an original crofter's cottage, close beside the sea on the edge of Loch Dunvegan looking west to the Outer Hebrides and the Isle of Harris on the horizon. Great emphasis is placed upon providing a warm welcome to guests and customers, but professional service skills are paramount at all times. The Menus specialise in dishes using local fresh produce of all kinds, including some of the best shellfish in the World, caught in cold, clear waters around the island's shores. Authentic provenance is key to the success of The Three Chimneys and the business has played a leading role in Scotland in encouraging the use of local ingredients, since its inception. The restaurant has always had a progressive attitude to serving delicious, contemporary food, with a good slice of Scottish culinary heritage built-in to many of the dishes served.
