His philosophy on food is one of layered flavors with dishes that are influenced by West Coast cuisine where the protein is no longer the "star" of the plate. Chef Fowke has been coming to the Okanagan for many years to meet with local farmers and produce growers to cultivate personal relationships and expand his vision and passion for fresh, locally sourced foods.
